I have some vegetables plants in planters and I think I have too much fertilizer, how do I remove it?

I have chili pepper and Roma tomato plants in some planters because I live in an apartment. The get plenty of sun and are properly irrigated but, I have leaves wilting UP, not down. The only thing I can think of is that I have too much fertilizer in the soil. When planted, I used Miracle Grow potting soil and mixed in manure. So, if I do have too much fertilizer, how do I get rid of it but, if that isn't the reason, what is causing my leaves to wilt UP? Thanks.
