What do the bets range from on blackjack tables in las vegas or any casino?

If you go to the high roller area of a casino you can find tables with anywhere from $5000 - $25,000 limits. Binion's Horseshoe in Vegas used to have a policy of covering any bet no matter how large, I don't know if any casinos still do that.
